Tangawiss is a ginger drink with a clean bite and a long, warm finish. This sample tutorial makes a small pitcher for sharing.

Ingredients

  • 150 g fresh ginger, peeled and roughly chopped
  • 1.5 L water
  • 3–4 tbsp sugar or honey, to taste
  • 2 limes, juiced
  • Ice, to serve

Method

  1. Blend the ginger with 250 ml of the water until coarsely ground.
  2. Pour the mixture into a saucepan with the remaining water. Bring to a gentle simmer for 10–12 minutes.
  3. Remove from the heat and strain through a fine sieve. Discard the solids.
  4. Stir in the sugar or honey while the liquid is still warm. Cool completely.
  5. Add the lime juice, taste, and adjust the sweetness or bite. Serve over ice.

A note from the kitchen

For a sharper drink, steep the grated ginger without simmering for as long. For a softer finish, simmer a little longer and strain twice.
