Sweet fried plantains are the simplest way to bring a little golden warmth to the table. Use plantains that are ripe but still firm enough to slice cleanly.

Ingredients

  • 3 ripe plantains, peeled
  • 2 tbsp neutral oil
  • A pinch of salt
  • Lime wedges, to serve (optional)

Method

  1. Cut the plantains into 1 cm rounds on a slight diagonal.
  2. Heat the oil in a wide pan over medium heat.
  3. Fry the plantain rounds in a single layer for 2–3 minutes per side, until golden and caramelised at the edges.
  4. Drain on a plate lined with paper towel. Sprinkle lightly with salt.
  5. Serve warm, with lime wedges if you like.

A note from the kitchen

Do not crowd the pan. If the plantains steam instead of brown, the edges will stay soft rather than caramelise.
